COMMERCIAL ITEM DESCRIPTION
CHICKEN BREAST FILLET WITH RIB MEAT, SEASONED,
CHUNKED AND FORMED, GRILLED, THERMOPROCESSED
The U.S. Department of Agriculture has authorized the use of this Commercial Item Description.
This Commercial Item Description (CID) covers thermostabilized, grilled, chunked and formed, seasoned chicken breast fillet with rib meat, packed in flexible pouches, suitable for use by the Federal Government and as a component of the Meal, Ready-To-Eat.
Salient characteristics.
Ingredients used for the grilled chunked and formed seasoned chicken breast fillet with rib meat (chicken fillet) shall be chunked chicken breast meat with rib meat, water, modified food starch, salt, grill flavor, dextrose, sodium phosphate, onion and garlic powder, autolyzed yeast, and antioxidant.
A. Poultry. Only breast meat with rib meat shall be used in this product. The chickens from which the breast and rib meat are derived shall be fresh chilled broilers, fryers, or roasters. The breast and rib meat shall not be frozen before forming into the raw chicken fillet. All poultry meat must be in accordance with the Meat and Poultry Inspection Regulations (9 CFR Part 381).
1. Sampling. The poultry meat shall be sampled and examined for organoleptic requirements and defects before formulation or size reduction. The number of samples examined will be those outlined in the applicable U.S. Department of Agriculture (USDA) Poultry Division acceptable quality level (AQL) sample plan. If any sample does not comply with the organoleptic requirements or has more defects than the maximum tolerance for the AQL sample plan, the product or the lot the sample represents will be rejected for use in preparation of the grilled chicken breast fillet.
