DESSERT POWDER, IMITATION GELATIN, ARTIFICIALLY
COLORED, NONCHILL SET
The U.S. Department of Agriculture has authorized the use of this Commercial Item Description in preference to Federal Specification C-D-221.
This Commercial Item Description (CID) covers imitation gelatin dessert powder processed into approved commercially acceptable containers, suitable for use by the Federal Government.
Salient characteristics.
The product shall be of the following types as specified in the solicitation, contract, or purchase order.
Type I – Raspberry flavor
Type II – Strawberry flavor
Type III – Orange flavor
Dessert powder shall be uniformly blended dry mixtures prepared from food grade materials and compounded using good manufacturing procedures. The ingredients shall be Food Chemicals Codex purity as appropriate for hydrocolloids, flavors, acidulants, buffers, and dextrose. Sucrose shall be a fine granular sugar. Artificial colors shall be FD&C certified. Natural flavors may be used. The dessert powders shall be free-flowing, homogenous, and free from lumps. The imitation gelatin dessert shall set within 45 minutes at 80O F when prepared according to the manufacturer’s directions. The prepared imitation gelatin dessert shall be firm but slightly soft. It shall not be runny, tough, or rubbery. The prepared imitation gelatin dessert shall have a color, flavor, and aroma characteristics of the flavor it represents and shall comply with the following:
