Finished product requirements.
The finished product shall have a characteristic slightly spicy, slightly salty grilled chicken flavor and a smoked, grilled chicken aroma. The product shall be free from off-flavors and off-odors. The texture shall be that of chunked and formed chicken breast and the fillet shall be cohesive, moist and tender, not dry, mushy, or rubbery. The skinless and boneless fillets shall have a moist appearance with a brownish gold color and brown grill marks. There shall be no evidence of excessive heating (darkened or scorched). The fillet shall have a natural chicken breast shape. The fillets shall be not more than 3.25 inches (8.26 cm) at the greatest width and not more than 4.5 inches (11.43 cm) at the greatest length. Each fillet shall weigh not less than 4.0 ounces (113.40 g). Each fillet shall comply with the following analytical requirements:

Reworked product. Cooked product which has not been frozen and which is wholesome and salvageable but (1) is misshaped, (2) is fractured (separated into two or more pieces), or (3) does not meet the formed width) length, and weight requirements may be reworked into raw formulated product at a maximum level of 2 percent provided it is blended in accordance with Food Safety and Inspection Service, USDA procedures, and complies with the organoleptic and defect requirements for raw product.
Analytical requirements.
Three filled, sealed, and thermoprocessed pouches shall be selected at random, by the USDA grader, from the lot regardless of lot size and tested for fat and salt content. The test results shall be reported to the nearest 0.1 percent. Any result not conforming to the finished product requirements, as indicated by a USDA certificate, shall be cause for rejection of the lot. Analyses shall be made in accordance with the following methods of the Official Methods of Analysis of the AOAC:

Contractor’s certification.
By submitting an offer, the contractor certifies that the product offered meets the specified salient characteristics and requirements of this CID; conforms to the producer’s own specifications and standards, including product characteristics manufacturing procedures, quality control procedures, and storage and handling practices; has a national or regional distribution from storage facilities located within the United States, its territories, or possessions; and is sold on the commercial market. The Government reserves the right to determine proof of such conformance prior to the first delivery from point of origin and any time thereafter, up to and including delivery at final destination, as may be necessary to determine conformance with the provisions of the contract.
